I sort of wrote an ending to my most-most recent chapter of my book and I don’t know if it works. Chapter endings can be pretty hard. I wish I could just say, annnnnnnd … scene. Or, “cut!” Heh.
Anyway, I had an amazing salad for lunch, which I brought from home. The base is half of a Trader Joe’s cous-cous salad, which is pretty awesome on its own: cous cous, tomatoes, raisins, pearl onions, herbs, viniagrette, etc. On top of that, I added some chopped green apple, carrot, cucumber, sunflower seeds, and some quickly-sauteed diced chicken breast.
Is it any wonder that salad is my favorite food? I should really get in the habit of making my own cous cous, tho. Quinoa, too.
Tonight I must not forget to take the knives to the butcher counter to get sharpened tomorrow. They really need it. Not much else going on this evening, except that Brian is taking an exam for his class, and will be rewarded by quesadillas when he gets home.
I don’t have a lot to do at the moment and I’ve been at my desk all day, so now is the time to walk somewhere for a coffee break. cheerio.
I practically live on cous cous salads in the summer, and cous cous is so easy. My favorite is cous cous cooked in stock, with basil, onion, coriander and garlic. Add chopped tomatoes, cucumber and leftover chicken. toss it with vinaigrette made with olive oil and lemon juice. garnish with fresh cilantro. mmmmm. I eat that salad 2 or 3 times a week in the summer.

sounds delicious! I’ve been dreaming of your oatmeal lately, hehe…what all do you put it in again, and what brand/type of oatmeal do you purchase? I *think* I remember you saying granny smith apples, cranberries, walnuts? I may have asked this before, and if so, sorry!!
I used bulk rolled oats, so, no brand really. Old-fashioned rolled oats, Quaker is fine, but in bulk it’s way way cheaper. I think I get it for like 80 cents a pound.
I chop and cook the apples beforehand in a saucepan with a teaspoon of brown sugar, some raisins, and cinnamon. When they are cooked, I set them aside in a bowl or something. Then prepare the oatmeal, and right before the last step (cover with a lid and turn off heat), throw the fruit back into the saucepan so they can all finish together. VOILA!
